How to Make Soojaebi (Korean Noodles Made Using Flour)

Soojaebi was first eaten traditionally by Koreans when they were lacking in money and had nothing to eat.

Soojaebi was made from kneading flour with water and cooking this doughy mixture in an anchovy based soup.

This dish has come a long way from its humble beginnings. Soojaebi is now one of the recipes listed on the menus of high class restaurants. Here is how to make this wonderful dish.

Here are the ingredients that you will need: all purpose flour, eggs, onions, garlic, mushrooms (any kind will work), potatoes, black pepper, salt, carrots, zucchini, and seafood (optional)

First, we need to make the dough for the noodles. To make the dough, mix 4 cups of flour with 2 cups of water.

Knead it until it becomes a not too watery dough. Wrap it in some plastic and leave it aside for now.

While the dough is sitting, chop up your vegetables. chop up the onions, mushrooms, potatoes, zucchini, and carrots roughly or however you would like to chop them as it doesn't really matter for this dish.

To make your soup for the dish, boil a large pot of water with white onions, garlic, scallions, pepper, and salt.

Let this simmer for about half an hour so that the broth gets the full flavor of the onions. Now you can either drain the broth to only have the stock or just leave it in as is.

Once the broth is done, you can add the vegetables. With the vegetables, add a bit of soy sauce for flavoring and let the mixture sit so that all the vegetables soak in the flavor of the broth.

Next, whisk your eggs and add them bit by bit while stirring the soup so that the eggs don't form big clumps.

Next, raise the heat on your soup and get your dough. Get a chunk of dough in one hand, and with the other, rip off pieces of the dough. Try to make the dough as thin and flat as possible and add them into the soup.

Once the dough rises to the top of the soup, that means that they are fully cooked.

Let it cook for a little bit more, and you're done. This is a long recipe, but worth it once you succeed.
